Peachtree doesn't allow you to 'downgrade'. If you wanted to start using Premium, you would have to export all your data out of Quantum and Import it into Preium using the FIling/ImportExport function. But there is a certain order it has to be in, if you search the help files about rebuilding a company it will give you the order. As a heads up, it can be a painful process depending on how much data yoiu have.
