You have two options.  First mark them inactive (check the box on each item)  then go to "Options" Tab > "Global" and hid inactive items.

 

OR use "Change ID" and rename the items with a "Z" in front of each item.  They will still come up on the drop down list, but they will all be at the bottom.

Is there some way to hide unused inventory items (lines) so that they don't show up in drop down menus?
